  1. Over medium heat, cook oil, onion, shallots and crushed red until caramelized a bit while prepping lentils and rice. Stir occasionally.
  2. Add broth and heat until boiling. Add lentils and rice. Return to boiling then simmer for 30 min, stirring occasionally.
  3. Season with salt if needed and serve. Top with good olive oil or toasted almonds or feta or chives or nothing at all.
